4 Steps On How To Clean A Proofer Cabinet

A simple checklist to keep bakery proofers in top shape

Proofing cabinets enable you to have the best dough rising results. They are good for bakeries, sandwich shops, pizza parlors, and other establishments needing to make large batches of dough. Proofing cabinets are a safe place where the temperature and humidity are controlled in a moisture-controlled setting. These ideals settings allow bakers to increase production while keeping quality standards high.

Having a daily cleaning routine for bakery proofers will ultimately extend the life of your bakery equipment. Check out these quick tips for performing a cleaning session.

4 Steps On How To Clean A Proofer Cabinet

1: clean the interior

When starting your daily clean-up for bakery equipment, use the recommended dilution of cleaning solution as stated by the product manufacturer. Using a clean cloth, a bucket of warm water with cleaning solutions, and freshwater, wipe down the inside of the cabinet, making sure to reach into any crevasses where grime can accumulate. Use fresh water and a soft dry cloth to remove any extra solution and dirt.

2: clean the exterior

After you have cleaned the inside of the proofing cabinet, reassemble any parts you may have removed. Using a fresh bucket of warm water and solution, wash the outside of the cabinet, again removing grime from any cracks where grime can collect. Be sure to remove any extra solution with fresh water and a soft dry cloth.

3: Be cautious around sensitive parts

Performing a daily clean-up will help maintain a Commercial Proofer's performance. Regularly cleaning equipment will ensure cooking consistency, as well as, avoid a large build-up of grime. Be careful when cleaning around sensitive probes and sensors. Damaging sensors or temperature probes can be costly in repairs.

4: Avoid using harsh chemicals

Using harsh chemicals, including bleach and chlorinated cleaners, can harm the interior and exterior of the equipment. A mild cleaner/degreaser with warm water can go a long way in ensuring your Proofer is clean and performs regularly.

5: Extra cleaning tips

Be sure to never use abrasive materials such as steel wool when cleaning stainless steel. Never use cleaning items that may be abrasive to the equipment's interior and exterior. We also wouldn't recommend using a power washer to perform cleaning tasks.

Frequently asked questions

Frequently asked questions
What is a proofer cabinet?

Proofing cabinets enable you to have the best dough rising results by creating an environment where the temperature and humidity are regulated in a moisture-controlled setting. They are great for bakeries, sandwich shops, pizza parlors, and other establishments needing to make large batches of dough. These ideals settings allow bakers to increase production while keeping quality standards high.

What is the difference between and proofer cabinet and a holding cabinet?

Proofing cabinets are designed to create moisture-controlled settings and regulate a temperature between 70 - 115 ℉. Holding Cabinets, on the other hand, are designed to preserve already cooked food at or above 140 ℉. This helps keep food safe from bacteria and mold growth.

Can I polish the outside?

Using a stainless steel cleaner for the exterior will help make your proofer cabinet look brand new. We recommend using a water-based stainless steel cleaner to make stainless steel parts sparkle without feeling greasy.

Why should I not use harsh chemicals?

Using harsh chemicals when cleaning the interior or exterior of your proofer cabinet can damage sensitive parts of the unit including probes, sensors, door gaskets, seams, joints, silicon, and aluminum parts. In most cases, using harsh chemicals can cause permanent damage costing hundreds of dollars in repairs. Be sure to use a neutral cleaner or as a safe bet, use soap and water for cleaning.
